Coconut Chia Mango Parfait

Servings: Yields 6 - Parfaits




Ingredients:

• 7.25 oz. of Coconut milk, unsweetened

• 5 oz. of Almond milk, unsweetened

• ¼ cup of Chia Seed

• ¼ tsp. of Finely grated lime zest

• 2 tsp. of Lime Juice

• 1 Tbsp. of maple syrup

• 1 Mango, Fresh - peeled, seeded and dice 1/2"

• 1.5 tsp. of toasted and grated coconut



Method:

1) Mix Chia seed, coconut milk, almond milk, lime juice, lime zest and maple syrup together in bowl or large mason jar. Store overnight in refrigerator.

2) Place 3oz of pudding in dish.

5) Top with 2oz diced mango.

6) Garnish with a spring of mint and a pinch of toasted coconut

Shelf Life: Use within 24 to 48 hours.
